Capitol Reef National Park

Capitol Reef is an underrated National Park in my opinion. It has an impressive mixture of both mountainous and grassy areas, all with gorgeous landscapes or views. You can even pick fruits at local orchards on peak seasons. Spend 1-2 days here.
