Mori, a Kaiseki cuisine restaurant, located on the second floor of Paled Sisez in Haeundae, Busan. Mori is co-operated by a Korean chef and his Japanese wife. Its layout comprises predominantly of a counter that seats a maximum of 8 people, with a generous spacing between seats. The Kaiseki course, constituted of approximately nine dishes, was substantial. The Hatsu course which included various dishes, served ensemble, was also worth trying and the stock base in the Suimono was excellent. Furthermore, the quality of the raw material in the Sashimi was superb. The grilled flounder, the Braised Red Snapper, Tempura Halibut, and shrimp pot rice that came out later, offer a quality and abundance that is difficult to find even in Seoul. The Chef's unyielding attitude, using the best available raw materials as much as possible, might be the secret behind such high-quality taste. I highly recommend you visit when you’re in Busan.
