Rogi, a new woodfire wine bar in Hannam-dong, completes all its dishes with the primitive tool of fire. Chef Park Jun-seung, who oversees Rogi, applies both familiar Hot Smoke and unconventional Cold Smoke to each dish, allowing diners to experience various intensities of smoky flavor. While the description of the establishment might make the flavors seem complex, a single bite into any of Rogi's dishes immediately spreads the primal taste of fire throughout your mouth. The balance in smoked foods, which can easily be disrupted if not done well, is meticulously maintained here, thanks to Chef Park's accumulated experience from other establishments (Corner Ripe, Swan Ye, Astral). Rogi's opening adds an interesting new option to the wine battleground of Hannam-dong. Thanks to this, I had a grateful dining experience.
