HIGHLY-RAVED HANDMADE SOBA SHOP OPENED NEW OUTLET IN CHINATOWN! 🍜🇯🇵
Back in 2020, a Japanese couple first started their business as a small hawker stall in Jalan Besar, serving freshly-made soba noodles with a fusion twist. 😋 Fast forward to today, they have since expanded and just opened their third outlet in the heart of Chinatown!
Named Reiwa Soba Kappo, the storefront follows a Japanese minimalist design with just a wooden door with a plain concrete wall. 🎍 The 20-seater interior is simple as well with an open counter where you can watch the chefs in action. Similar to their Bedok concept, this shop serves an expanded menu aside from soba, comprising of seasonal appetisers and agemono dishes. 🍣
We had their signature 𝗥𝗘𝗜𝗪𝗔 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝗦𝗼𝗯𝗮, which comprises of cold handmade buckwheat noodles with their Thai-inspired dipping sauce instead of the traditional tsuyu. 🇹🇭 The soba noodles have a nice bite and a delicate earthy flavour, almost good enough to be eaten on its own! The sauce adds a savoury spicy kick to every mouthful that isn’t too salty. 🤤 The 𝗦𝗲𝗮 𝗕𝗿𝗲𝗮𝗺 𝗞𝗮𝗸𝗲 𝗦𝗼𝗯𝗮 is served hot in a homemade fish broth. There’s something about the broth which has a mild gracefulness and fresh taste that we just couldn’t get enough of. The salty savouriness is perfectly balanced. 🍜
