In Kyoto, there are so many culinary restaurants that you will not be able to complete it even if you eat it for the rest of your life. Everyone cooks with their own fine philosophies and beliefs, but there are very few places where you can enjoy the 'best' honor. There are still many great restaurants that I have not discovered, but I wonder if there is any restaurant that has a higher level than this one from my experience.
Kiyama Kiyama has an overwhelming difference in the water used, and because the dashi is made using well water with a soft soft nature that I have never experienced before. You can feel it. It's just 'water'.
In addition, the ingredients used, the beauty of the equipment, the level of cooking, and the resulting sense of season, flow, quantity, and service were all highly satisfactory. It is difficult to gain popularity on social media as it is a restaurant where photography and sharing are limited, but if you want to taste the essence of Kyo-ryori, it is a must-visit place.
