“The only Michelin 3-star Chinese restaurant in Japan”
This is the restaurant Sazenka that received a huge shock. This is the first time I have experienced such delicate Chinese cuisine. They were dishes that brought out the best umami by using the ingredients, dashi, and the natural taste of tea even with the minimum amount of salt.
Sazenka is the only dining restaurant in Japan to receive 3 stars in the Japanese Michelin Guide Chinese food genre. The concept of this restaurant is to apply the Sino-Japanese exchange of aesthetics, art, and spirituality to the cuisine, which is a Japanese philosophy born in the Heian period, called harmony and hanjae. It offers a completely different experience to the extent that it is in stark contrast to typical Chinese cuisine, which is characterized by deep-fried, oil, pungent taste, and intense sauce as it serves dishes that reflect Japanese aesthetics. In order to bring out the original taste of the ingredients, the highest quality ingredients are obtained from all over Japan, and then delicately cooked and flavored with various spices.
Ruby Roman (grape) dessert that costs more than 500,000 won for a single taste I tasted that day, chashu carefully cooked for 72 hours, and somen noodles blended with Gyokuro tea leaves and pheasant stock, all of which are so overwhelming that it is difficult to even imitate them anywhere else. I could feel the level difference. I think I was touched by his uncompromising commitment to food, space, and service.
It is a very difficult place to make a reservation, but once you experience it, I think your concept of Chinese food will change completely. You can enjoy the best selection of wine pairings along with the best dishes, and you can also enjoy tea pairings made with the highest quality tea leaves from Japan/China in season.
Personally, I think the quality of Sazenka's wine service and wine/tea pairing is in the top five of Japan as a whole. You can experience great synergy when served with a meal.
