Located in Shirokanedai, Tokyo, Sushi Shimazu has become a popular sushi restaurant notoriously difficult to book just months after opening, thanks to its exceptional skill. It is famous for purchasing its tuna from Yamayuki, the best tuna dealer at the Toyosu Market in Tokyo, which guarantees the quality of the tuna, not to mention the other Neta are just as excellent. The Shari (rice) is a slightly moist style but still retains a texture where each grain stands out, seemingly using aged rice, which is considered suitable for sushi, giving it a starch nuance. I really liked it overall, but it's a shame that it’s not easy to book.
