Located within the Aman Kyoto Resort, the Kaiseki restaurant Takahan 鷹庵 offers a dignified experience of Kyoto Kaiseki cuisine, with memorably simple dishes made from high-quality, seasonal vegetables sourced from Kyoto. The space doesn't boast lavish decorations but exudes elegance. The addition of first-class hotel service gives a serene and contemplative feeling. The consistently mild flavor from the beginning to the end of the course was exactly to my taste. Personally, I believe that truly high-quality cooking relies not on basic condiments like salt, soy sauce, and sugar but uses them minimally to extract the natural flavors of the ingredients, which is why I highly rate Takahan's cuisine.
