In just a year and a half, it has already ascended to two Michelin stars, a testament to the curiosity and continuous visits from gourmands. The reason people globally seek out Chef Calvert stems from his versatility. When classical techniques with depth are needed, he utilizes them splendidly. For developing differentiated dishes, he applies creative cooking methods learned from his experiences. Above all, what seems most exceptional about the chef is his ability to communicate with ingredients. Dining at SÉZANNE makes it clear what intention the chef had with each ingredient and what he wants to convey to the guests. It's a cuisine that, without other presentations, draws empathy and admiration purely through taste. As this is only the beginning of the chef's journey, it wouldn't be too far-fetched to speculate cautiously that SÉZANNE might become a strong contender for three stars in a few years. If you desire to experience French cuisine that aligns perfectly with classic and current trends, it's highly recommended to visit. I am gratefully satisfied with the meal.
