Jamsil / Songnidan-gil, Seoul • Restaurant
In an environment where the competitiveness of individually operated restaurants surpasses that of franchises, it's noteworthy how small and medium-sized F&B ventures are expanding their influence with solid branding. Examples include the successful exit of CNP after boosting Ourhour, LBM, which operates Layered and London Bagel among other businesses, and GFFG, which has seen substantial growth with Noted. Moreover, numerous small enterprises are launching new brands with inventive ideas everywhere.
The latest brand from Billionaire Stores, known for its success with numerous brands starting with Kyoyang Katsu, is gaining attention for its Japanese-style exterior in Hwaseong-dong street. This place, offering rare flat udon and rice bowls as its main, has opened its second branch on Songridan-gil in January, aligned with the returning F&B trend of Japanese ambiance. Though the store size is significantly smaller than the main branch, the merit of enjoying casually available flat udon, typically limited to some Japanese restaurants, remains. As the shop's name ends with 'Gyoza,' it suggests a crispy gyoza as a fine accompaniment to udon. There are also two types of mini rice bowls available to satisfy a slightly empty stomach, which harmonizes well with the flavor of udon.
