The word 'matures' feels deeply and fully here. One of the few places visited more than once, Seogyo-dong's 'Book Ikda' is. Aimed to be a 'book bar,' there is a variety of wines and beers, along with simple plate menus. There are also various meetings such as reading groups, so check their Instagram @book.ikda.
