Sushi Yuki
Central, Singapore • Restaurant
[Just Opened] Finally, the new sushi restaurant by Chef Yuki, former Head Chef of Ginza Sushi Ichi, has opened at Wilkie Edge. It’s increasingly challenging to operate a sushi omakase restaurant nowadays, when we already have lots of excellent sushi restaurants in Singapore, and even more in Japan which is already opened for travel. But Sushi Yuki certainly stood out for two reasons - both price and finesse.
🔸
When omakase restaurants now routinely start their dinner menu from $380++ onwards, you will not find one starting from $250++, and certainly not one helmed by a stalwart like Chef Yuki who saw Sushi Ichi through the years while retaining the Michelin star. The highlight was certainly the sushi (more on that separately), and that’s precisely what you get in the $250++ sushi-centric menu with 12 pieces of nigiri.
🔸
But at $350++ or $450++, you get a series of cooked and raw starters as well, as pictured. Chef Yuki’s finesse certainly shows in the simply cooked kinki, aburi fugu shirako, uni yuba, or even the raw sashimi such as chutoro, tako, hamaguri. There’s no gimmick here, even if you consider the purposeful addition of caviar to add a savoury dimension to the uni dish. Just honest, unpretentious plates that live up to the integrity of Japanese cooking.
🔸
And certainly, there’s a lot I want to say about his sushi. And I’ll dedicate another time to talk about that.
