Min Jiang
Central, Singapore • Restaurant
Such rainy weather calls for a warm comforting soup such as this. This is on Min Jiang's ala carte menu, Braised Fish Maw Soup with Crabmeat. It's not just about the large, thick, collageny slab of fish maw, because the highlight of this dish is the soup itself. It's very thick, naturally sweet, and rich in flavour. Just look at the colour of the soup!

There's another dish on the ala carte menu that I couldn't stop myself from eating (I almost finished half a duck all by myself) - the Poached Salted Silver Hill Irish Duck. I've tasted Irish ducks many times, and Chinese restaurants have usually roasted it. This is poached with salt, so it retains all the juices of the duck, along with its lovely fats. Juicy, slightly salty, and naturally sweet.
