If someone were to ask me to choose a restaurant one must dine at before they die, I would not hesitate to answer Arpège. Chef Alain Passard, the maestro of vegetable dishes who turned Arpège into a legend in Paris, shocked the city by offering guests the first-ever all-vegetable course in France. Despite significant backlash at the time, he has maintained a remarkable achievement of keeping three Michelin stars for several decades. Chef Passard's journey can be found on Netflix: Chef’s Table. Arpège sources its ingredients almost daily directly from three locations, including the chef's personal farm, ensuring the highest quality of ingredients in Paris. It's not just any vegetables, but those whose deep, inherent taste cannot be experienced anywhere else in Paris. Arpège is where one can taste the importance of ingredient authenticity, elevated by fantastic imagination. Now, if desired, one can comfortably order meat and seafood as well, enriching their dining experience with the chef's signature, perhaps adding lobster or other meats. Considering the dinner prices are quite high compared to lunch, visiting for lunch and adding a single à la carte dish might offer the highest satisfaction. Thank you for the meal.
