At Sushi Hashimoto in Tokyo's Shintomicho, you can taste the sushi of Chef Hashimoto, who studied at the world-renowned Sugita. Each grain of rice is uniquely chewy, a style hard to find in other high-rated sushi restaurants, making it both unique and delicious. Especially, the freshness of the shellfish used is remarkable, leaving an unforgettable impression with the vividly fresh scallop adductor sashimi tasted that day. It's a pity that it's only evaluated on who his master was. It's a place that offers really delicious sushi through painstaking effort, but it's shadowed by being compared to his master. For Chef Hashimoto, it might be a lifelong assignment, but with his master being such a significant figure, it's tough to step out of the shadow, and the criteria by which people judge this place is bound to be strict.

Located in a quiet residential area of Nakameguro, Utsutsu Sushi is an Instagrammable sushi restaurant that has obviously put effort into its design and presentation. However, it does not neglect the most important aspects of taste and quality, faithfully adhering to the essentials. The marinated tuna belly sushi, lightly seared after a long period of aging and then dipped in soy sauce, was particularly memorable. It is relatively easy to make reservations and is foreigner-friendly, making it the perfect place to enjoy a meal in a bright and comfortable atmosphere.

Located in the youthful streets of Jiyugaoka, Sushi Kiwa is one of the sushi places I frequent the most, offering an incredible sushi course at unbelievably affordable prices. The Taisho, embodying a sincere devotion to cooking, a conviction to treat customers with the utmost care, and a humble attitude as a chef, despite his advanced age, personally picks up fish from the Toyosu Fish Market every morning, prepares, cures, and serves the sushi himself. This might be the place where you can experience genuine craftsmanship at the most reasonable price.

Located in Shirokanedai, Tokyo, Sushi Shimazu has become a popular sushi restaurant notoriously difficult to book just months after opening, thanks to its exceptional skill. It is famous for purchasing its tuna from Yamayuki, the best tuna dealer at the Toyosu Market in Tokyo, which guarantees the quality of the tuna, not to mention the other Neta are just as excellent. The Shari (rice) is a slightly moist style but still retains a texture where each grain stands out, seemingly using aged rice, which is considered suitable for sushi, giving it a starch nuance. I really liked it overall, but it's a shame that it’s not easy to book.

Kizaki

Sushiya Kizaki has an old style charm. It's rarely located near Akasamitsuke, so if you're looking for a good sushi restaurant nearby, it's a good choice.
The lunch course can be enjoyed at a reasonable price, but the quality of the tuna is quite high.
In general, Shari is a style that extracts the original taste without aging by adding additional ingredients to emphasize the soft, nutty flavor that is cooked for a long time rather than being squishy.

It is often said that good tuna tastes like yogurt. This is because tuna has a strong savory taste that is comparable to milk fat due to its oiliness, and at the same time, the better the tuna grows, the sweeter and sour the flesh becomes.

Located in a residential area near Roppongi Hills, Sushi Tsutong is one of the few sushi places where you can enjoy delicious tuna at a reasonable price. The lunch course is 12,000 yen, offering quality tuna that is hard to find in this price range.

Reservations can be made a week in advance, and there are many entertainment elements, so I think it's the perfect place to enjoy comfortably while traveling.

“Does this make sense for 6,000 yen?”

Near Shimbashi, Minato Ward, a short walk from Onarimon Station is 御成門駅. Since it is an ordinary office town, there is no place to come unless you live here, but there is a famous restaurant Tomidokoro, where you can enjoy delicious sushi at the best price.

Lunch sushi course is 6,000 yen. In a good sense, they use neta of unbelievable quality for an unbelievable price, and their nigiri skills are exceptional. The sushi is big enough to fill your mouth, but the rice is somewhat sticky and moist, and it naturally blends into one with the soft aged neta.

How can you get such high-quality sushi for less than 60,000 won? You could call it a market destroyer. It has already become as famous as it should be, but if you reserve a month and make a reservation, you can afford it. If you are planning a trip, give it a try.
