Shinji at Carlton is the one with the Michelin star, but both of us prefer the sushi at the St Regis outlet. They are similar, but nuances such as the tare, compression of rice, and vinegar made us prefer the sushi at the St Regis outlet more.

One of us did 12 pieces at $150, the other 15 pieces at $200. Which to go for? I would think the only deciding factor is how hungry you are, because the only difference between the two is three additional sushi - botan ebi, kinmedai, and sawara. These are typical sushi that wouldn’t surprise the palate, so it’s more to fill the tummy if 12 pieces aren’t enough for you.
