The new nest of Chef SeoHyunmin, who was the executive chef at Impression (formerly Michelline 2star). The cuisine SeoHyunmin chef presents in Allen is modern French based on fermentation and aging of Korean cuisine.
He polished French cuisine with experience overseas as a chef at Eleven Madison Park (New York's 3-star restaurant) and it is deeply infused with Korean ingredients such as doenjang, rice nuruk, and Korean vegetables.
Personally, the cooking style has not changed significantly from when he was at Impression, but the high level of completion that has improved noticeably than the previous visits stood out.
Perhaps it was because his understanding of the ingredients had improved?
Allen has become a place where you can experience really fine dishes without any gaps in taste, like an alchemist combining ingredients.
In addition to the food, I think it's a neat and elegant dining room that can be counted in Seoul.

Mosu Seoul 🍽

Innovative Cuisine Mosu, chosen by most gourmets as one of the best dining options in Seoul.

Mosu's unique style of offering food of various genres on a course is not found anywhere else in Seoul, and the quality of the food is not only in Korea, but also in the world.

The reason that Mosu has developed this far can be said to be due to the perfectionist tendency of Chef Ahn Sung-jae, who leads Mosu.

For example, the original kitchen is a really crazy space with loud noises.

However, in Mosu, even though the kitchen is an open kitchen where you can see the entire kitchen, you can hardly see any noise coming out.

The only thing left in my mind is how hard it is to train and organize the flow, and it's amazing how quietly an open kitchen can be operated.

Not only food, but also a wide, fine space with advice and elegant service to match, make the course of Mosu more meaningful.

Absolutely pricey dining, but I hope that Mosu Seoul is a must-visit for special occasions or anyone who wants to change their gastronomic spectrum.

They believe that Korean cuisine can capture its deep roots through dishes that fully reflect the seasons, and what's more, they have been making the incredible happen by changing the course of the meal every month. It is a space to experience the direction of Onji-eum, which beautifully harmonizes the values of both the past and present, and if you are interested in Korean food, I think you must visit to contribute to their mission of carrying on traditional culture by finding the value of Korean cuisine and educating young chefs. Once you try the food at Onji-eum, you'll feel yourself being treated and loved even with a single spoonful of rice. It's such a great impression because they serve such exquisite and delicate dishes. I always eat gratefully.

Mito 🍚

Mitou is a 2021 Michelin-starred kaiseki (Japanese dinner) restaurant and an iconic establishment of Seoul kaiseki with a huge fan base.

It is said that the meaning of the name Mito is an unreachable state.

As its meaning, Mitou felt like a space for Chef Kwon Young-woon and Chef Kim Bo-mi to pursue the perfection of food itself.

The fact that each piece and material tells a story, and that it is designed to be easily understood by the guests, makes the two chefs really feel great.

When I saw the two of them cooking, I kept watching them as if they were possessed, so the time waiting for food was no regret at all.

Like such a wonderful appearance, the chefs serve up Mito's unique kaiseki courses, which cannot be found in Japan, using the finest Korean ingredients that can only be experienced at Mitou.

As you eat, you will feel warm and grateful for nothing.

For that reason, whenever I visit Mito, I feel that I want to return sooner rather than feeling that something is missing.

Sushi Omakase made with only the best ingredients by Chef Park Kyung-jae, a well-known sushi master in Korea.

If you've tried some sushi and love sushi, I think you'll immediately know why Kojima's sushi is so special, why, and how great it is.

Kojima is the best sushi restaurant in Korea that offers the highest prices, but you will never feel like you're wasting it.
